Glucose oxidase is produced through deep fermentation and refined extraction from the superior strain of Aspergillus niger (Aspergillusniger). It is widely used in gluconic acid production, food processing, feed, and pharmaceutical industries.

1. Temperature range: Effective range 20-65°C, optimal range 50-55°C.

2. pH range: Effective pH range 4.0-7.5, optimal pH range 5.0-5.5.

3. Effect of metal ions on enzyme activity: Zn2?, Mg2?, Ca2?, Na? activate the enzyme to varying degrees; Cu2?, Fe2?, EDTA have no significant effect on enzyme activity; Ag?, Hg2? strongly inhibit the enzyme.

Liquid enzyme pH (25°C): 6.0-7.0, bulk density: ≤1.25g/mL; solid enzyme fineness (pass rate through 0.4mm standard sieve): ≥80%.

2. Enzyme activity definition: One enzyme activity unit is defined as the amount of enzyme, expressed as u/g or u/mL.
